牛腩肉、陈皮、生姜、花椒、大蒜、葱白、干辣椒、冰糖、老抽、生抽、蚝油、料酒、水淀粉。

1、陈皮洗净泡软，用刀刮去内部白色内膜，切成片，浸泡陈皮的水留用；
2、各式配料准备好；
3、锅里加入适量油，放入陈皮、生姜、花椒、大蒜、葱白、干辣椒、冰糖小火炒香；
4、牛肉切块放入开水中汆烫洗净以后，加入锅内煸炒，喷入适量料酒，加老抽上色、生抽、蚝油调味；
5、一次性加入漫过所有材料的水、之前浸泡陈皮的水，大火煮开转小火慢炖至牛肉酥；烂；
6、转大火，加入适量水淀粉勾芡收汁即可起锅。

1、陈皮最好选用广东新会地区产的陈皮，味道比较香浓正宗，泡软的陈皮白色内膜会有苦涩的味道，最好刮除；
2、肉类放入开水中汆烫数分钟，捞出洗净，可以去除肉类特有的腥味；
3、老抽、生抽、蚝油都含有盐分，根据个人口为，决定是否另外加盐调味；
4、炖煮肉类最好一次性加入足够的水，中途最好不要加水；
5、最后加入适量水淀粉勾芡，可以使这道菜看起来更诱人，汤汁更浓稠，口感更好。
